- High Smoke Point: Refined peanut oil has a high smoke point of around 450°F (232°C), making it excellent for frying, searing, and roasting without breaking down or producing smoke.
- Flavor Profile: Refined oil has a neutral or very mild taste, which complements other ingredients well. Unrefined or cold-pressed oil, however, has a richer, more pronounced nutty flavor and aroma, suitable for dressings and marinades. Roasted peanut oil has an even stronger, darker, nutty flavor and is best used as a finishing oil.
- Culinary Applications: It is a staple in Chinese, Indian, Southeast Asian, and Southern American cuisines. Specific uses include:
- Deep-frying foods like French fries, fried chicken, and tempura.
- Stir-frying vegetables, meats, and noodles.
- Creating flavorful salad dressings and marinades.
- Authentic preparation of Indian dishes like theplas and undhiyu, and for tempering spices (tadka).
